Khao Phad Sapprod
(Pineaaple Freid Rice)

A popular Thai street food, this dish offers an assortment of sweet and tangy flavours. A complete meal in itself, the dish can be enjoyed for lunch or dinner.

     

Ingredients

  • 75 gms bonless chicken cubes
  • 20gms cornflour
  • 10 gms plain flour
  • Oil, for frying
  • 1 egg, beaten
  • ½ each, yellow & red capsicums,
  • Cut into cubes
  • 150 gms boiled white rice
  • 5 gms turmeric powder
  • 50 gms cubed pineapple
  • 2 tsp tomato ketchup
  • 2 tsp red chilli paste
  • Salt, to taste
  • 1 tsp sugar
  • ½ tsp vinegar
  • ½ pineapple shell, to serve in
  • 10 gms chopped spring onion
Method
Mix together cornflour & plain. Coat chicken cubes in this & deep fry. Keep aside. Heat the work & add 2 tbsp oil to it. Add the beaten egg to the hot oil in a thin stream, stirring continuously till it scrambles. Add red & yellow capsicum & chicken. Saute & toss in the boiled rice, turmeric powder & pineapple cubes. Stir through thoroughly. Add tomato ketchup, chilli paste, salt, sugar & vinegar & mix well. Transfer the rice into the scooped out pineapple half shell. Garnish with spring onions.
 
     
     

Snow White Lobster

Crispy, crunchy lobster meat is fried lightly & served with greens. The oranges shell adds colour to the presentation.

 

Ingredients

  • 1 lobster, about 450 gms
  • 2 egg whites, whisked
  • 2 tsp cornflour
  • 1tsp plain flour
  • Oil, for frying, plus 2 tsp
  • 1 tsp garlic paste
  • 2 fresh red chillies, chopped
  • 100 gms fish stock
  • 15 gms finely chopped spring onion
  • 15 gms broccoli florets
  • 10 gms Chinese cabbage
  • Salt, to taste
  • ¼ tsp white pepper powder
  • 2 tsp cornflour, dissolved in water
  • ½ Tsp lemon juice
  • 10gms chopped coriander

 

 

Method

Scoop lobster meat & cut into cubes. Boil the empty shell till it turns orange & keep aside. Beat 1 egg white & mix with plain flour, cornflour & white pepper powder. Toss in lobster cubes, coat well & fry in hot oil till golden & the lobster is cooked. Heat 2 tsp oil in a work & garlic paste & red chillies. Saute lightly for a few seconds. Add fish stock & bring it to a boil. Add carrots, broccoli, spring onions, Chinese cabbage & lobster meat. Cook for 30 seconds & then add salt, pepper powder & cornflour paste. Slowly pour in the remaining egg white, add the chopped coriander & lemon Juice. Serve the dish while hot in a Lobster shell.

 
     
     

Coconut Rolls with Honey Butter Sauce

This is a more contemporary Oriental dessert made with milk & honey. Coconut rolls are not only a popular street food in Singapore & Thailand, they are also good to round off meal at restaurants.

     

Ingredients

  • 6 wonton sheets
  • ½ fresh coconut, grated
  • 25 ml condensed milk
  • 1 tbsp sugar
  • 75 ml honey
  • 50 gms butter
  • Oil to fry
 

Method

Mix grated coconut with condensed milk & sugar. Divide the mixture into six equal portions & place each portion on a wonton sheet. Roll & seal edges with a drop of water. Heat oil & lightly fry the wonton rolls. Place them on a serving plate. Heat a frying pan & warm honey & butter. When well mixed, pour This over the fried wontons & serve Immediately.
